Lobster Pasta
I sub-categorize my recipes by animal. What sound does a lobster make? First though a high pitched scream, cause if you throw them upside down in the pot that’s the sound they make. That would cause some hate from PETA (not the People Eating Tasty Animals version).
If you like seafood but dislike that “seafood” taste; this is a great recipe as it masks a lot of that taste.
Phase 1: Ready the Lobster
I started off by pealing a couple of oranges and throwing them in the blender. With this adding a cup or so of white wine, butter, olive oil, *fresh* nutmeg and paprika. It’s ok to use a little extra nutmeg as this taste will resonate through the dish. For the wine I’d suggest a sweeter one such as a Riesling
After blending put in a soup pan and bring to a boil. Take a couple tails and de-shell them and split in half. Let them boil in the ‘gup’ until fully cooked add salt to taste.
Phase 2: Marinara Sauce
Taking 4 tomatoes I cut Xs on the top and bottom then dropped in boiling water until they start to fall apart. Take them out and peel the skin off. Place these in a blender and puree. Then move it into a sauce pan and add big pieces of garlic clove, finely diced shallots and finely diced fresh basil. Bring to a boil.
Phase 3: Assembly
Using cooked pasta as the base apply the marinara across. Take out the seafood and chop up into bite sized pieces and then evenly amongst all the pasta plates.
Take a small to moderate amount of basil, thyme and tiny bit of cilantro; finely dice and spread across the top. It’s ok to leave the basil in larger pieces as it adds to the decor of the plate. Squeeze lemon juice across and serve.
